I am usually not a fan of cookbooks, though I love cooking. I make meal for a family of four nightly even though there’s now only two of us in the home. I just make things up or have old recipes i’ve used forever. Cookbooks are usually too much reading and paying attention for me. I like to make a big production but my own production and mess, not one I have to follow. But when I was sent Best of Bridge Weekday Suppers I decided to take a look inside and I actually liked what I saw. Very rare indeed! So today I spent some time making my weekly menu and shopping list and picked out one dinner and one dessert. The dinner will be made later in the week, but we picked Grilled Portobello and Roasted Red Pepper Sandwich located on page 82. Tonight I made a treat from the Quick-and-Easy Sweet Stuff section. There’s also quite a few nice picture pages throughout the book. Not all recipes have pictures.

I made these delicious SNICKERDOODLE BARS from page 266. they turned out delicious…. and super easy to make. I will include step by step directions just in case you want to make them too. Perfect alongside a cup of hot tea.
SNICKERDOODLE BARS
These tender bar cookies will fill your home with the delicious aroma of cinnamon.
2 Cups Granulated Sugar, Divided
1 Cup Butter, Softended
2 Large Eggs
1 Tsp Vanilla
3 Cups All-Purpose Flour
1 1/2 Tsp Cream of Tartar
1 Tsp Baking Soda
1/2 Tsp Salt
2 1/2 Tsp Ground Cinnamon, Divided
1/4 Tsp Ground Nutmeg
Preheat oven to 375 and lightly grease/oil a 13- by 9 inch pan. Inn a large bowl or kitchenaid mixer cream together 1 3/4 cups sugar and butter until fluffy, add eggs, one at a time beating while adding. Beat in vanilla, flour, cream of tartar, baking soda, salt, 1/2 Tsp cinnamon and nutmeg. Beat until combined, this mixture will be thick. Scrape side of bowl and place dough into prepared pan. I found it easiest to press down with wet fingers. Press gently to smooth surface. Mix remaining sugar and cinnamon and sprinkle evening over the top. Bake for 25 to 30 minutes or until lightly golden brown. Let cool in pan, cut into squares and serve warm or cooled. Makes 20 bars.
Tip: Store in an airtight container or ziplock at room temperature for 1 week or in the freezer for up to 6 months. Excellent with a cup of hot tea. Not too sweet. Just perfect.
