I received some wonderful products from Mohawk Valley Trading Co. 
Two of them are honey products, 
Raw Adirondack Wildflower Honey & Raw Tulip Poplar-Black Locust Honey 
I love using honey in hot tea's, peanut butter & honey sandwiches and recipes that call for sweeteners

Mohawk Valley Trading Co.'s states, If you are planning to use honey for its health-benefits, it must be raw honey. Heating honey (pasteurization) destroys the all of the pollen, enzymes, propolis, vitamins, amino acids, antioxidants, and aromatics. The rawest honey available is comb honey  (sections of the hexagonal-shaped beeswax cells of the honeycomb that contain raw honey that have been cut from the wooden frames of a beehive), however most people prefer bottled raw honey.

The Raw Adirondack Wildflower Honey I received is excellent. It came with a light capping. If you didn't know what a capping is, like me... it's small particles of propolis, flecks of honey comb and grains of pollen that pass through the sieve when raw honey is strained. Raw honey is often used by pollen allergy suffers to lessen their sensitivity to pollen by eating 1 to 2 tsp of it each day. The idea is that by introducing small amounts into their systems by eating raw honey, a tolerance to pollen allergens is built up. 

The Raw Tulip Poplar-Black Locust Honey is made From about the last week of October (after we harvest the Wildflower Autumn Honey) thru April some of our hives are trucked to The Delmarva Peninsula to winter over in a milder climate and to get an earlier start in the spring than they would in Upstate NY. Tulip Poplar and Black Locust trees bloom about the same time down there and this honey is derived form the nectar of their blossoms. Like buckwheat honey, it’s dark color is due to its high mineral content.Our raw Tulip Poplar-Black Locust honey is unheated, unpasteurized, unfiltered, unprocessed unblended and in the same condition as it was in the hive.

This honey is EXCELLENT. I have been using it almost daily on either morning english muffins, tea or toast. 

The Mohawk Valley Trading Company specializes in raw varietal honey which is made primarily from the nectar of a particular type of blossom or flower. To capture the unique character and flavor of the blossom or flower, beekeepers must study botanical bloom and flowering patterns when planning hive placement. 

Our raw honey is unheated, unpasteurized, unfiltered, unprocessed, unblended and all of the pollen, enzymes , propolis, vitamins, minerals, amino acids, antioxidants and aromatics are in the same condition as they were in the hive.

No pesticides or herbicides are used in our apiaries and although we do not call it organic, our honey is about as organic as you can get from The United States:
