I currently have Wild Berry, Strawberry and Lemon fruit spreads in my refrigerator. They are soooo good they truly don't last long because we just gobble them up. Rigoni di Asiago Fiordifrutta fruit spreads have NO ADDED SUGAR!! This is huge. I tend to avoid jams and jellies because they have so much added sugar I might as well be eating candy and soda. We try to avoid sugar in my family, so I feel really good about serving Fiordifrutta fruit spreads.

I love that the ingredients list on these spread consists of only a few natural ingredients. There's no huge long list of things I've never hear of and no red dye this or blue dye that. Fiordifutta organic fruit spread is just that......fruit. I had to try the Lemon spread. I love that there are so many flavors that are not "typical" . The lemon is super good and can be used on multiple food. I like it with chicken. It is intriguingly tart and indispensable in the preparation of pies and cakes. The Lemon spread provides a wonderful extra touch during morning breakfast.

Wildflower Honey is delicious on everything. I really love it in my tea. Mielbio Flowers is the classic honey millefiori of northern and central Italy. It is great with breakfast spread on bread or toast, and as a sweetener for yogurt.

Mandarin Limited Edition is like gold. This Mandarin Honey has a flavor that is delicate and sweet. It is made in Calabria, an area of Italy that is well-suited for the production of Clementines, a fruit also known as Mandarin oranges. The taste is pleasantly sweet and full, reminiscent of almonds and orange zest.

Hear Doggy! Pet Toys Review

Molly LOVES her HEAR DOGGY! Toys.
She has about 50 toys, no joke, not sure why we have that many dog toys, but we do.
Out of that 50 about 6 are HEAR DOGGY toys and those are pretty much the ONLY toys she plays with with the exception of a large snake toy and a small starfish that
she has had since she was a baby & she still plays with from time to time.
When I reviewed HEAR DOGGY! toys in the past Molly fell in love, she stopped playing with everything and those were her new favorites. They lasted quite some time until one day I guess she had enough and those poor toys days were over, Molly tore them open and they were done. Once she opens the toys up I throw them out.
Otherwise my house is a scrap toy landfill.
We have in the meantime bought her 2 new HEAR DOGGY! toys and she received the three above toys for review.
Luckily these are very durable toys that last a very long time.
Just sometimes Molly gets into a mood that there is no stopping her and the toys life is over.

One recipe I have been making for years and tonight I got to make using Bonnie Maman Apricot Preserves is
Sticky Chicken. It's super easy (only 5 minutes of prep time) and tastes great. Serve with rice and a salad, fast, easy and delicious dinner. With using Bonnie Maman Apricot Preserves the taste was even more delicious.

Sticky Apricot Chicken

Ingredients
8 bone-in, skin-on chicken thighs
olive oil, for browning
for the glaze
¾ cup Bonne Maman apricot preserves
1 tablespoon soy sauce
zest and juice of 1 lemon (you need approximately 2-3 tablespoons of lemon juice)
pinch of chilli flakes (optional)
salt & pepper to taste
2-3 tablespoons water, to thin down

Instructions
Heat a large, deep frying pan over medium-high heat.
Add a splash of oil and brown the chicken pieces all over until the skin is crisp and golden,
approximately 10-15 minutes.
In the meantime, mix together all the glaze ingredients. Add 2 tablespoons water to thin the glaze out a little but not enough to make it overly watery.
When the chicken is golden brown and almost cooked through, pour off the excess fat.
Return the pot to the heat and add the glaze.
Allow the glaze to simmer gently, basting the chicken regularly until the glaze has reduced and the
chicken is cooked through.
Serve the chicken on rice with a generous amount of glaze spooned over.
I serve mine with rice pilaf and salad

Mother's Day Breakfast in Bed Review

This year make Mother's Day extra special with Breakfast in Bed.
Treat Mom to something sweet like,
Viki’s Granola's Maple Cranberry Granola Pancakes,
Gaea’s Feta and Olive Oil Cakes, or Carrington Farms' Ghee French Toast.
She will feel extra pampered after receiving such a
delicious treat.
Serve these items one a tray with some pretty flowers
while she eats clean the kitchen and maybe the house, let her know you care
and let her have a day with no worries.

Maple Cranberry Granola Pancakes

Ingredients:

1 cup flour
1 tablespoon sugar
1 teaspoon baking powder
½ teaspoon baking soda
Pinch of salt
1 cup buttermilk
1 egg
3 tablespoons melted butter
¼ cup Viki’s Cranberry Maple Granola
Maple syrup for topping

Directions:
In a large mixing bowl, blend flour, sugar, baking powder, baking soda and salt. Using a whisk or hand held mixer, whisk in buttermilk and egg until well combined and smooth. Stir in the melted butter. Heat a non-stick pan or griddle over medium heat. Using a ¼ cup measure, pour pancake mix to cook. When pancake is golden brown, flip and cook other side. Keep warm in a 275° oven. To serve stack a few pancakes and top with maple syrup and Viki’s Cranberry Maple Granola.

Since you only need 1/4 a cup of your Viki's granola you will have plenty leftover for snacks, more breakfasts and anytime treats.
This granola is excellent on yogurt, just plain out of your hand as a snack or on whatever you want to add granola to.

Ghee French Toast

Ingredients:

5 eggs
3 tablespoons of sugar
1/3 cup 1% milk
3 tablespoons cinnamon
6 slices of brioche bread (cut into ½ inch slices)
2 tbsp of Carrington Farms Organic Ghee

Directions:

Whisk eggs, sugar, milk, ghee and cinnamon for 30 seconds.
Dip both sides of bread in mixture until saturated
Put 1 tbsp of ghee in pan and turn heat on low for 20 seconds to let the ghee melt.
Place 3 slices of bread in pan at a time and keep on medium heat.
Cook slices until browned on both sides.
Repeat steps 3-5 for the last 3 pieces.

Feta and Olive Oil Cakes

Ingredients

5.30 ounces (or a little less than ¾ cup) feta cheese
3/4 cup powdered sugar
2 1/4 Tbsp. honey
1/2 cup Gaea’s Kalamata D.O.P. Greek Extra Virgin Olive Oil
1 cup all-purpose flour
3.50 ounces (or a little less than ½ cup) ground almonds
1 tsp. baking powder
Gaea Pitted Kalamata olives, cut in half
Brown sugar for garnishing

Directions
Preheat oven to 350F. Process the cheese with the sugar and honey in a mixer until smooth. Add olive oil. Combine flour with the ground almonds and baking powder and add to bowl while mixing. Divide batter among 6 greased one-use individual cake molds and top each with half an olive. Sprinkle top of batter with brown sugar and bake for about 25 minutes.
